The caciosalame is a product that comes from the encounter between the Molise salami and the famous caciocavallo cheese of Molise.

The delicate flavour of the Molise salami meets the sweet notes of the caciocavallo paste in an embrace with a balancing taste.

Fact: At the end of the Second World War many young people in search of afuture emigrated overseas in search of a better life.

Not being able to bring meat products because they could not pass customs controls, they tried to hide the salami in a layer more or less thick Caciocavallo.

This is how caciosalame was born.

How to taste it:

  • Try it on homemade pizza.
  • Place the caciosalame slices on fresh bread and heat it up in the microwave.
  • Sandwich stuffed with caciosalame, tender salad and cherry tomatoes
  • Great ingredient for an afternoon snack or apericena with friends

RECIPE:

SPAGHETTI WITH CACIOSALAME

Slice the caciosalame finely; remove the slices of salami and keep the circles of caciocavallo aside.

Brown the salami with the oil and chopped shallot.

After only 2 minutes pour the tomato sauce into the pan, add salt and cook for 15 minutes.

Cook the pasta; pour it into the pan with the sauce already prepared, add the circles of Caciocavallo cheese kept aside.

Arrange everything in the serving dish and garnish with a few circles of Caciocavallo. Grate a little parmesan or grana cheese.
