It is a variety of truffle very similar to the Black Summer Truffle: extremely versatile in the kitchen, it is characterised by a flavour and aroma much appreciated by connoisseurs.
The Black Uncinato Truffle (Tuber Uncinatum) is harvested by expert Molise truffle hunters in the autumn, between September and December. It is distinguished by its dark gleba with pronounced white veins and an intense aroma reminiscent of hazelnut and undergrowth.
It's extremely versatile in the kitchen: excellent grated on pasta, risotto, eggs, and meats. Its more assertive aroma than Scorzone makes it ideal for dishes with a richer flavor.
Conservation
Wrap in paper towels, seal in a glass jar, and refrigerate. Consume within 7-10 days.
