Onion and Dark Beer Compote

This compote is made with white onions from Isernia and Molise craft beer.

This dark beer compote, with a much stronger flavor than the other two types of compote, goes perfectly with roast meats, cold cuts, and even our cheeses, giving them a decidedly pleasant alcoholic aroma.

CURIOSITY

One of the oldest fairs in Italy is the Fiera dei Santi Pietro e Paolo in Isernia, also known as the "onion fair" (held every year from June 28 to 30) because onions are the main attraction.

Looking at old photographs of this fair and listening to the information handed down to us by elderly farmers from Isernia, we have learned that the authentic and traditional native onion is white, flattened in shape, often large or even very large (with a weight that in some cases can exceed 800 grams).

The white onion is mainly produced in the municipality of Isernia in Molise.

The onions are also processed into onion compote and black beer in Molise.

GOOD TO KNOW

Onions are composed of 90% water, 1% protein, very little fat, and some important minerals such as potassium, calcium, and phosphorus.
