Onion Compote with Black Beer

The compote we are proposing is based on White Onion from Isernia with the addition of Molise craft beer.

This black beer compote, with a much stronger flavor than the other two types of compotes, goes well with

with roast meats, with cured meats and also with our cheeses giving a distinctly pleasant alcoholic hint.

CURIOSITY.

Among the oldest fairs in Italy is the Saints Peter and Paul Fair in Isernia also known as the "onion fair" (every year from June 28 to

June 30) as the onion is the main protagonist.

By looking at old photographs of this fair and listening to information handed down to us by elderly Isernia farmers, we learned

that the authentic and traditional native onion is the white, flattened shaped one, often large or even very large in size

(with the weight exceeding 800 grams in some cases).

The production territory of the white onion is mainly the municipality of Isernia in Molise.

The processing of onions into Onion Compote with Black Beer also takes place in Molise.

Onions are composed of 90 i water, 1 i protein, very little fat and some major mineral elements such as potassium, calcium

and phosphorus.
