Caciocavallo is a stretched-curd aged cheese with a compact yet elastic texture. Its smooth, thin rind ranges from white to golden-brown depending on the aging process, while the interior releases an intense aroma and a rich flavor that evolves from delicately sweet to pleasantly sharp.
The natural string beneath the head allows it to be hung easily in a cellar or cool place to continue the maturation process.
