    The Poggese EVO oil produced by the Cooperative " La Sorgente" of Poggio Sannita, is obtained by pressing only olives coming

    exclusively from the olive groves of the members. The production area of this oil includes the municipalities of Poggio Sannita (IS), Agnone

    (IS ) and Belmonte del Sannio (IS) whose hilly territories are naturally suited to the cultivation of olive trees.

    Cooperativa Poggese's EVO oil is obtained by pressing Olives of different cultivars only by mechanical processes,

    not chemical and under optimal thermal conditions that guarantee an exceptional quality of the product preserving it from possible alterations.

    The perfect quality of the fruits and the use of natural methods, allow to obtain a full-bodied but easily digestible oil, which preserves

    unaltered the organoleptic and taste characteristics typical of the most genuine Olio dell'Alto Molise.

    The olives are hand-picked and taken to the oil mill. They are selected and processed within 24 hours so that the oleic molecule

    remains intact as created by nature.

    The olives are pressed using a continuous cold cycle plant in which the olives are first defoliated, then washed with water

    running water, ground and crushed in stainless steel tanks. After about 45 minutes, pressing takes place.

    CHARACTERISTICS

    The color of Poggio Sannita Extra Virgin Olive Oil is deep green, with a genuine, full-bodied flavor.

    The cold processing of the olives, by centrifugal extraction with the latest generation of continuous cycle plant, gives

    Poggese extra virgin olive oil organoleptic superiority and better preservation than other oils.

    This type of extraction safeguards the set of principles responsible for the aroma of the oil itself, such as phenolic compounds and substances

    aromatics.

    The low degree of acidity, the balance of flavor, together with linoleic acid, promote the elimination of cholesterol, playing a

    positive in "antioxidants" and dietary "lipids" by preventing ischemic heart disease.
