The jam we are proposing is made from white onions from Isernia with the addition of Molise craft beer with notes of coffee, chocolate, sultanas and plums.
This beer-flavoured jam, with a much stronger flavour than the other two types of jam, goes very well with roast meat, giving a very pleasant alcoholic hint.
CURIOSITY
Among the oldest fairs in Italy there is the Fair of Saints Peter and Paul of Isernia also called "fair of the onions" (every year from 28th to 30th June) because the onion is the main protagonist.
Observing old photographs of this fair and listening to information handed down to us by elderly growers in Isernia, we learned that the authentic and traditional local onion is white, flattened, often large or even very large (weighing more than 800 grams in some cases).
The production area for the white onion is mainly the municipality of Isernia in Molise.
The processing of the onions into Composta di Cipolla Bianca di Isernia also takes place in Molise.

Onions are composed of 90 % water, 1 % proteins, very few fats and some important mineral elements such as potassium, calcium and phosphorus.
In recent years, the Isernia onion has been increasingly marginalised in the territory, risking to disappear.
Thanks to the valuable work of the 'guardian farmers' who have continued to perpetuate this ancient crop, there is finally a generational change.
