Fresh tomato sauce, also known as salsa, is the Mediterranean condiment par excellence, simple and tasty. The best time to make it is right in summer, especially in July and August, when tomatoes are well ripe, flavorful and fragrant.
The tomato puree we propose is made only in summer with tomatoes produced exclusively in Molise.
