Caciocavallo

The name Caciocavallo derives from the words "cacio" and "cavallo" (horse), that is "cheese" which is generally hung in pairs for seasoning on the "horse" of a sturdy wooden stick. It is a pasta filata cheese produced with cow's milk. Excellent to taste in the fresh, semi-mature, mature and truffle varieties.
