Caciocavallo is an aged stringy cheese characterized by a semi-hard texture dictated by the firmness and elasticity of its interior. Its outer rind, smooth and thin, takes on different shades of color, from white to yellowish-brown, depending on maturity. The natural string placed underneath the head allows it to be hung conveniently, in the cellar or in a cool place, to prolong its maturation.
Son of our land, the caciocavallo di Agnone is the iconic cheese of the Molise region in Italy and around the world. Enamored with its origins, its intense aroma, mellow flavor, youthful sweetness and ripe piquancy, we have made caciocavallo our flagship product and our mark of quality. Formed by the skilled hands of our cheesemakers and king of our production, the Di Pasquo - Agnone branded caciocavallo tells our story and that of our territory.
Caciocavallo: recipes
Savory, tasty and lactose-free, it finds its way into numerous dishes, but it is at its best fresh and hung on the grill for an original caciocavallo impiccato to be melted directly on slices of toasted homemade bread.
Depending on seasoning, branded caciocavallo can be paired with jams and honeys for flavor-packed tastings.
