Eggplants In Oil

They are prepared in the summer and stored in the pantry to be consumed during the winter.

They are cooked in water, white wine vinegar, and salt. They are then seasoned with garlic and parsley.

The jars of seasonal eggplant are added to the many preserves that are usually prepared in spring and summer, such as

artichokes and zucchini.
