    Sweet Sausage Under Gravy

    "Suet" is the fat of the processed pork.

    Preservation "under suet" gives the sausage more tenderness, so the color and taste remain unaltered.

    Usually this preservation technique is done by those who still raise their own meat.

    Sweet sausage under suet is the basic ingredient for the preparation of a typical Molise recipe "U' funnateglie" .

    The term "funnateglie" means sinking the bread in the delicious sauce, made with cherry tomatoes and peppers cut into strips.



    RECIPE U' FUNNATEGLIE

    In a frying pan, prepare a sauté with oil and onion, then add the chili pepper.

    When the onion has wilted, add the sausages without cleaning off the lard. As soon as the suet has melted add the cherry tomatoes and peppers as well. Let them cook for 25 minutes over a gentle heat, adjust the salt and add the basil.

    When almost cooked, turn off the heat and arrange the eggs in the gaps between the sausage. Cover with the lid and cook for a few minutes until the egg whites are cooked.
