Sweet Sausage in Lard
“Sugna” is processed pork fat.
Preserving the sausage in lard makes it softer, while preserving its color and flavor.
This preservation technique is usually used by those who still raise their own meat.
The sweet sausage in suet is the basic ingredient for the preparation of a typical Molise recipe "U' funnateglie".
The term "funnateglie" means dipping the bread in the delicious sauce, made with cherry tomatoes and peppers cut into strips.
U' FUNNATEGLIE RECIPE
In a pan, sauté the onion and oil, then add the chili pepper.
Once the onion is soft, add the sausages without removing the lard. Once the lard has melted, add the cherry tomatoes and peppers. Cook for 25 minutes over low heat, season with salt, and add the basil.
When almost cooked, turn off the heat and place the eggs in the empty spaces between the sausages. Cover with a lid and cook for a few minutes until the egg whites are cooked.
