Liver Sausage Sotto Sugna is made from selected Italian pork raised and slaughtered in our factory.
Preservation under suet gives the product greater tenderness, so the color and taste remain unaltered.
This preservation technique is done by those who still raise their own meat, typical of sausages from Molise.
The mixture of Liver Sausage consists of about 33 percent pork liver and about 67 percent pork, seasoned with salt, pepper, little garlic.
This is minced and stuffed into natural casings.
Its uniqueness lies in the right proportions of the mixture, which makes it very tasty and unique in the seasoned sausage family.
The suet is an excellent substitute for theEVO oil or butter.
Liver Sausage Sotto Sugna can be enjoyed grilled, in omelets or as an ingredient for sauce but also au naturel and in polenta.
